Producer: Paraschos

Production Area: San Floriano del Collio(GO)-Friuli V.G.-Italy

Vintage: 2020

Grapes: Ribolla Gialla

Vinification: Spontaneous fermentation and long skin contact. Hand-harvested grapes ferment spontaneously with the grapes' own yeast cells in open wooden vats. Maceration with skins for 2–3 weeks gives the wine its amber color, complex aromatics and distinctive tannin structure. No additives, fining or filtration.

Aging: Large Slavonian barrels without added sulfur. The wine is aged on the lees in large, old wooden barrels for at least 24 months. Bottled unfiltered and unsulfurized – a pure and unadulterated expression of Oslavia.

Alc.: 12,5%vol.

Allergens: Contains sulfites

Serving temperature: 12-14°C

Pairings: Pasta with fish and tomato, mushroom risotto, white meats, blue cheeses.

Tasting Notes: Complex and textured Ribolla Gialla with hints of citrus, ripe peach, herbs and warm spice tones. A deep and fresh wine with structure, salty notes and light tannins, perfect with fish, white meat and dishes with a lot of flavour.

In San Floriano del Collio, where hills fold into the light and the border feels more like a breath than a line, the Paraschos family nurtures a vision of wine shaped by patience. Evangelos, who arrived from Greece in the 1980s, found in these lands something familiar: the same stone, the same wind, the same stubborn vines that demand respect rather than intervention.

From this intuition, a winery was born—one that doesn’t chase trends but listens. Today, Alexis and Jannis carry their father’s legacy forward with a contemporary sensibility: historic vineyards farmed without chemicals, spontaneous fermentations, long ageing in large casks, and a philosophy that lets the land speak. Their wines—deep whites, radiant skin‑contact expressions, pure interpretations of Collio and Brda—are stories of borders, family, and a way of winemaking that refuses to rush.
